Ain;t got a darn thing to do with the Philippines but here goes:
Old Fashioned Pancakes, from scratch...
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted
Mix the flour and baking powder together, stur in the salt. Mix well and then
add the sugar, [for variety I often use brown sugar and the Philippines has
lots of brown sugar], now, add the butter, milk and an eggs, mix well and
until it is smooth. Cook on a medium hot griddle... flip when the bubbles are
seen on the first side that is cooked and serve warm. I top the pancakes with
homemade sugar surup made with brown sugar and water and a bit of vanilla
flavoring, [I hope to remember the maple flavoring when I return in February].
This is one of my saved recipes and I have made it many times in the islands.
Hope others enjoy it.... [cheap cheap]

The best pan cakes I have found here in Philippines, are not from any
restaurant, but, cook at home, I buy "Hungry Jack" pancake mix just
add water and away you go, makes he best pancakes I have ever tasted,
just bought another box today at market. If the supply in the store
is going down I buy 2 or 3 since it takes them a little while to re-
order.......
