Again, folks, not that it has a darn thing to do with the Philippines, but
it will follow this thread. If you take a small bit of cinnamon, nutmeg or
what ever spice, and sprinkle a small bit across the top of coffee before
it is brewed, you can get flavored coffee for a very cheap price. I have
used cinnamon, nutmeg and cloves, [separately and not together], and
depending on the mood and time of the year, it changes the whole brew.
There are so many ways of cooking using local [Filipino] ingredients, and
cooking the items in a western manner, that you will think you are in the
USA. We roast meat in our oven over racks and we use marinates and
rubs, sauces and ect that we are never bored with our meals.
I believe the local natives are often thinner than western folks. The natives
seem to have a different philosophy of eating than I do. They eat until they
are satisfied, or until their hunger goes away. Mama tells me she eats until
she feels no hunger. I eat until I am full. I consume many more calories than
than most of my in laws. Their children, my neices and nephews, seem to be
a varied bag, some thin, and a few heavy. My son is heavy, my daughter is
thin, or should I say 'lean'. [Thin can be a negative term and lean is usually
a positive term].
Somewhere on my various computers, I have over 25000 recipes. Most are
adaptable to Filipino Cooking. Some use blueberries, which are not generally available
in the islands. But with the same recipe, we can use strawberries, [available
in Baguio], or mangoes, [available in Marinduque]. Recipes for apricots,
[not available in the islands], seem to have fewer substitutions into Filipino
cooking and in western cooking done in the Philippines.
For those that are interested, there are hundreds of sites available on the
net for recipes. There are several on Filipino Cooking and recipes. Mama
will see a recipe now and then and adapt it. We now make meatloaf from
meat, [of course], and cook it in an electric frying pan or steam it over a
wok or kawali, similar to the way she cooks flan. Simple alterations of this
type allow mama and then and therefore papa, to enjoy western items in the
islands of paradise. Baking is not common in the islands as the oven takes
about 7 [I have heard other estimates also for you tecknacrates]
fuel to cook a dish than a direct flame over a burner.
Empotido is an example. It is a meatloaf like dish. Most folks put it into
aluminum foil. But... by rolling the servings into plastic wrap first and then
putting the foil on, the dish can be frozen and then cooked later on. We
make a few hundred tubes, put Chinese sausage inside some and boiled
eggs, [more trudational]
is very easy to make and a delight to even the western palate. Small tricks
and adjustments to a recipe, or in some cases preparation, make big differences
in the outcome of the dish and the satisfaction of the guests. [Please pardon
